 Caffeic acid is an organic acid that dissolves in hot water and is slightly soluble in cold water. It is a yellow-white crystal at room temperature and has a hemostatic effect but also a slight toxicity. In the natural environment, caffeic acid can be found in the bark of the blue dragonfly, or in the freshwater fern leafhopper or in the mushroom mulberry yellow. In food, caffeic acid is found in coffee and is one of the main natural phenols of nut oil. It is also found in barley grains.
